The South is synonymous with home chefs and down home cooking. Surprisingly, one is hard pressed to find an eatery that specializes in the type of food that Grammy used to make. Fallon’s Gourmet in downtown Gulfport has truly harnessed that essence in their hot plate lunch specials as well as take away meals.
Simple dishes, I have found, can be harder to execute well. Many can’t compete with the high expectations we Southerners have, and while the food is surely acceptable, it’s just lacks that “home made” quality. Chicken salad has always been a dish whose texture and consistency is both hard to balance and cater
to. I was pleasantly surprised after my apprehensive first bite. The
consistency walked the delicate line of not being mushy or too dry. The smoked flavor profiles of the chicken itself resonated through the dish, and when paired with mandarin oranges, pecans and spring greens, created a powerful explosion of flavor. It is an absolute star of a dish.
It would seem that Fallon’s specializes in perfecting broadly varied recipes, and their shrimp
and grits is no exception. The
trinity – peppers, onions and
celery – accentuated the shrimp, blackened with homemade seasoning, and the grits maintained both a perfect springy consistency and incredible flavor. I have yet to experience a restaurant’s rendition
