Jennifer Katan offers safe choices for people who need to eat a gluten-free diet. She owns Flourish, one of the few businesses offering gluten-free baked goods, grab- and-go options, and a meal prep program.
“One of the best things about being in the restaurant industry is seeing the look on someone’s face when they realize they can safely eat my food,” Katan said. “I wanted to open a small cafe and bakery, because there are not many safe options on the Coast for a gluten-free diet. Maybe the business will evolve into a cafe.”
A Bay St. Louis native, Katan’s favorite cuisines to prepare are Southern, Cajun, and a little bit of Tex-Mex, and she loves to bake. She said gluten-free baking can be a challenge, and she’s passionate about food quality. “We almost
