“My parents brought me to the first meat market
they ever owned 44 years ago on Central Avenue in D’Iberville when I was two days old. I was raised in a play pen, and the sound of my dad and uncle Jimmie’s meat saw was my lullaby. My first memory of my life is scraping pork chops with my dad when I was five years old. Back then, nobody used gloves so I had blood all over my hands. It was just our way of life, so when I have to cut meat now, putting on gloves is weird to me.
I have watched my dad pick out the best places to build our businesses. It’s been the biggest privilege to watch them grow. I have learned so much, and every day I am still learning something new. We have been blessed with the absolute best employees and customers. I pour my heart and soul into our store and pray that my beautiful children, Colbie and Hayden, will learn the same work ethic I have.
My mother and grandmother were the hardest working women I knew. They never stopped and watching them, I learned there was always something that needed
to be done, whether at home or work. At the age of
12 my mom started the first Fayard’s dressed and pressed poboy. We started off using small griddles, and eventually moved from our little curb market to a BP gas station in Ocean Springs due to growth, where we had to use big grills. Most times they would have more than 30 poboys on 2 grills and 30 lunch specials going at once! This is the legacy that I am proud to carry on.”
