Chef John David Forde has always been fascinated
with cooking, going back to high school days when he and his friend Sean smoked whole hogs for their friends.
Forde was born and raised in Starkville and attended Le Cordon Bleu in Austin, Texas. He has lived on the Coast for five years and has been the chef at City Line Café since September 2017. City Line Café is located on the Jefferson Davis Campus of Mississippi Gulf Coast Community College (MGCCC), where Forde is also
an instructor. His favorite thing about being a chef is the creative aspect of it and developing dishes based on available ingredients. But he also enjoys teaching. “My favorite part of being an instructor is seeing students get excited about cooking and then doing well in the industry,” he said.
His favorite cuisine to prepare is Mexican because of the regional variations in the food and the excitement of working with authentic, vibrant ingredients, but his favorite cuisine to eat are raw oysters with lemon and horseradish.
Forde has worked in the restaurant industry since 2011. He urges patience for those wanting a career in the industry. “It takes years of experience and hard work to gain the knowledge to become a great chef,” he said. “It’s important that you work your way up from each position
so you have a full understanding of all aspects of the restaurant.”
City Line Café is a member of the Coast Restaurant Association and is located at 420 Debuys Road, Gulfport, on the first floor of MGCCC’s Hospitality & Resort Management Center.
