                  Evergreen
The menu at Evergreen in Ocean Springs is anything but ordinary. The swanky restaurant is in the heart of downtown across from the Red Apple Lounge and features classics such as fresh Gulf oysters served raw, pickled, charbroiled, or Rockefeller, seafood gumbo, snapper, and BBQ shrimp.
“But we’re doing playful takes with southern cuisines and the menu speaks for itself,” said restauranteur Kenny Williams. “We keep a very small menu so we can focus primarily on using the freshest and highest quality ingredients.”
Williams described Evergreen’s most popular dish as an upscale and modern “Chicken and Dumplins” with unique ingredients like ricotta gnocchi, burnt carrot, and confit cipollini onions. “The chicken is pan-seared in sage butter and gives the expectation of chicken and dumplings.”
And since drinking in the South is an art form, the cocktails and mocktails are just as spectacular, skewed toward pre- prohibition recipes. “We’re not just making a martini. We want a martini with a storyline,” he said adding the Vesper is served table side and made with gin, vodka, millet blanc, and orange.
“I went to the St. George Hotel in London in 1986 and had a Vesper, the original martini for James Bond. Ian Fleming wrote ‘Doctor No’ at this hotel, and he wrote about the Vesper. I knew we had to include it on the menu.”
