are an excellent pairing, but the truly superb side dish is the Three Cheese Macaroni and Cheese. It is creamy and decadent with a taste so amazing that my own momma said it was the best Mac and Cheese she has ever eaten. And for a Southern momma to proclaim something is the best, even better than their own mother’s treasured recipe, well, you simply know it is good.
The adored pair of chicken and waffles is given its own special treatment. Your basic waffle is replaced by a sweet potato and cornbread batter that adds extra crunch and texture. Topped with cornmeal battered fried chicken and a secret recipe BBQ sauce, this dish is one for the books.
Chef Allen’s love of creole flair stands out in her Cajun seafood pasta. Crawfish and shrimp are abundant throughout a Cajun cream sauce made with white wine and truffles. One of Chef Allen’s signature crab cakes rests delicately on top of this mile-high dish.
Both her sweet potato and pecan pies are everything you imagine they should be. Served warm, her pies make the perfect finale to a marvelous meal.
During the week, Chef Allen can be found serving up daily specials to dockworkers and longshoremen outside the Port of Gulfport. On the weekends, she is busy preparing catering feasts for local happenings and events. In addition to Liz and Nomie’s, Chef Allen has recently launched Nothing Bundt Love, a dessert company specializing in Bundt cakes that runs parallel to her catering.
Additionally, she has created her own line
of cooking and baking extracts ranging from lavender and vanilla to walnut and beyond. Whether the scale is big or small, Chef Allen has cultivated a following and is quickly becoming a rising star in the food industry.
Her favorite part of cooking is watching the reactions of patrons as they take their first bite, and everything about Liz and Nomie’s will have you grinning ear to ear.
