Good food makes you smile. It makes you happy and satisfied and even sometimes wanting a little more. Great food, on the other hand, speaks to your heart. It makes you feel warm and elated and can easily brighten any sullen day. Rich and decadent ingredients gilded with flavors that are nurtured with time and love make up some of the finest cuisines you can sample. We find these staples in both Southern traditions and Creole cuisines,
but when the two are combined, something magical happens.

As she grew older and spent more time in New Orleans, Chef Allen’s love of creole and Cajun cuisine began to take shape and she quickly honed
a craft that would serve her well in the coming years. I had the privilege of visiting Chef Allen’s kitchen and sampling some of the most amazing food you’ll find this side of the Mississippi.
