begin with a serving of their house bread and famous creole ranch dressing. All of their house made dressings are standalone favorites and have been known to fetch a high price during many silent auction events and fundraisers.
A crowd favorite appetizer is the Sauteed Crab Claws served warm in a white wine and butter sauce, although a new menu favorite is quickly on the rise. The Sweet Chili Shrimp features lightly battered Gulf shrimp tossed in a sweet chili sauce and served atop a bed of slaw and sprinkled
with almonds. This dish is spicy and tangy and a wonderful addition to the menu. A bowl of the Shrimp and Crawfish Dijon Bisque is an excellent way to round out the starting courses.
The Chimneys features a series of signature dishes that are certain to please. The Blackened Stuffed Filet showcases an eight-ounce filet topped with Gulf shrimp, crabmeat, mushrooms and green onions delicately covered in a rich hollandaise. The Trout 1640, aptly named for the restaurant’s address, showcases panéed speckled trout adorned with jumbo lump crabmeat and shrimp in a light cream sauce.
Pair these delectable meals with one of Watson’s signature cocktails for an extra treat. Starring
a combination of sour mash, various bitters
and simple syrup, the New Fashioned features a unique twist on a classic libation and is definitely one to try.
Both Sophie and Watson are delighted to continue The Chimneys traditions. While her original plan did not involve being the proprietor of a seafood restaurant, Sophie is thankful for the opportunities that she has been afforded while working in tandem with her brother. She has welcomed the challenges that come with running a restaurant and despite a steep learning curve, Sophie has enjoyed every minute of her time with The Chimneys.
Sophie and Watson attribute their success to their hardworking staff, remarkable chef and, most notably, their loyal customers. Their time each day at The Chimneys is tribute to what their parents started many years ago and helps them feel a continual closeness to them. The Chimneys is an absolute gem in the coastal dining crown and is an example of “Spirited Dining” at its very best!
