Lots of restaurants claim to serve Creole style New Orleans fare, but there is more to it than just bragging. The NOLA Creole touch is a light one, never heavy handed, always balanced and it takes a true saucier to get the sauces right. If you can master the saucier’s trade, then you are on to the next challenge, and that would be pairing the basic ingredients that belong in Creole food with local seafood and other traditional ingredients. You can’t just figure it out, it takes years of training, and the ones who get it right are the true master chefs of the trade.

a tee. He said, “I never attended a culinary school, but I taught in two.” What a telling statement! This chef spent years perfecting his trade in New Orleans and surrounding areas and every serious foodie on the Mississippi Coast should stand up and shout with joy that he decided to open his new place in Bay St. Louis.
