In the South, our tomatoes are plump with the perfect balance of sweetness and acidity. Not only are they a prized ingredient, but they are also an amazingly versatile fruit.
Food historians say that stuffed tomatoes are of Greek origin. The Greeks regularly found fruits and vegetables a nourishing vessel for many of their dishes. Throughout the centuries, this method of cooking has evolved as it has travelled through time and different regions of the world. Today, the more common item to stuff is a bell pepper, however, a thick summer tomato is a strong contender. I have written three stuffed tomato variations to serve up at your next summer dinner party.
