Fusion is one of those trendy buzzwords being thrown around, signifying that you’re about to witness something amazing. By definition, fusion is the process by which two separate entities are joined together forming one single element.
When fusion is applied to food, it typically means that two culinary cultures have come together to create something new. Something groundbreaking. Something revolutionary. Minds and tastebuds will
be blown as you prepare yourself to experience food at new heights. Sometimes this fusion is simply two different types
of foods coming together forming a cool, inventive dish. But sometimes, if you’re lucky, you’ll experience true foodie fusion. Multiple and distinct cultures coming together where the end result isn’t just a basic combination of various ingredients, rather a genuine synthesis of several
food elements into one. And that such experience takes place daily at the Long
Beach Market and Deli (LBMD).
The old joke goes, “a Dutch-Indonesian,
a South Korean, and a first-generation American walk into a deli...” Okay, so maybe that’s not the original line, but that’s definitely what’s taking place in Long Beach. Dustin van Norden, along with his father, Max, and mother, Lucia, are the culinary masterminds behind one of the Gulf Coast’s truest dining gems. LBMD
is one of the most popular places to go
for lunch and dinner, offering an eclectic menu that truly fuses together the different familial backgrounds that make up the
van Norden family. Lucia, a South Korean native, opened LBMD in December of 2011. Max, a Dutch-Indonesian and an esteemed hydrographer by trade and native, along with Dustin, soon joined the team. And not unlike their food, it’s been a fused family affair ever since.
Off the bat, my favorite dish is the Shrimp Tempura Summer Roll. This is a LBMD
