Few restaurants have the legs that Phoenicia has. Ask almost anyone in Ocean Springs and you are sure to get rave reviews, and people have been saying good things about this place
for years. I’ve been doing this gig for
a long time, and when I first visit a restaurant, I am all eyes and ears. What are other patrons saying? Is the wait staff attentive, do they know what they are doing and, are they well versed in what the menu has to offer? What about the overall atmosphere? There is a long list of things I look for, and I have to say that Phoenicia did not disappoint on any level.
One of the real perks of this job is
that I get to hang out in kitchens. This
is where you get to see the real heart
of a restaurant. Again, there is a list of questions I ask myself. Does the kitchen crew clean as they go? Is it a smooth operation? It’s pretty easy to spot conflict, and conflict in the kitchen often spells poor quality food and service. Is the food fresh? And again I have to say, Phoenicia got very high marks.
This place just hums! The dupe machine announces orders at a steady clip, prepared dishes move from
the kitchen via the “pass,” kitchen terminology for the stainless steal table with the mounted heat lamp where wait staff picks up dishes ready to be
