Stephanie and Michael Paoletti, the founders and sweet and salty culinary masterminds behind Food, Booze, & Hiccups, have had the restaurant’s concept in their back pockets since 2015.
“The timing is just finally right,” said Stephanie Paoletti, describing Butcher Baker as a tapas-style restaurant and a butcher shop with Michael Paoletti, who is a butcher by trade, regularly drying and curing sausage, salami, and other meats.
She added there will be daily baked breads, gourmet cheeses, local
honey, the freshest veggies, and pottery by Gulf Coast artists. Gluten-
free, vegetarian, and vegan options will also be available. “We will have everything you can find at a Saturday fresh or farmers market,” she said. “The remainder of the space will be a full bar with seating and handcrafted cocktails and a community-style table with seating for 16 people.”
The restaurant addition opens the door for numerous other culinary adventures for the parent company, which is affectionately known to locals as FBH. “We have so many things planned such as refined dinner nights, urban tasting dinners, and wine dinners,” she said, revealing Butcher Baker should be ready for a soft opening in mid-June at its Thorn Avenue location in Ocean Springs.
