Chef Anthony Rametta
“You don’t choose to become a
chef. It chooses you,” said Anthony Rametta, head chef at Scarlet’s Steaks & Seafood. A native of Okinawa, Japan, Rametta has lived on the Mississippi Coast for 24 years, but has been a chef for 26. He fell in love with the Coast’s culinary trends when he moved here.
At this point in his career, he has gravitated more toward preparing southern and Creole cuisine, but when he’s away from work, he’s easy to please. “A few things that I absolutely love...perfectly cooked craw sh with all the xin’s, a marbled ribeye steak, charbroiled oysters, and some good ol’ smoked ribs.”
His mother was his inspiration for becoming a chef. “She always put
so much love into her meals,” he said. He is also energized by the joy everyone has when they are pulled together with great food, drink, family, and friends.
“This business can be rewarding and demanding at the same time,” Rametta said. “Know that the sacri ces are great, but the job is such a wild ride and adventure.” For someone wanting to pursue a career as a chef, he advises to never settle, and always strive to be better than you were the day before.
