Chef Milton Joachim, IV, grew up in Louisiana lending a hand in the kitchen
of his family’s seafood business. While pursuing a culinary career may have seemed like the natural path forward, it wasn’t Joachim’s original plan. Still, his love of food prevailed, forging a path that allowed him to work with internationally renowned chefs in highly-regarded venues.
In 2016, he was offered the head chef position at an up-and-coming Ocean Springs restaurant lead by the Nicaud Restaurant Group. Joachim embraced the opportunity, and from there Charred was born.
By definition, to char one’s food is to burn it. While at first thought this may sound slightly off-putting, charring food brings a welcome addition of flavors and textures that you might not experience otherwise. Joachim prides himself of finding that sweet spot between charred and overdone, adding the perfect sear of flavor to various proteins and vegetables.
His favorite culinary medium is fish, which he sources locally and prepares in a variety of ways. Joachim challenges himself to see what flavorful dishes he can create and how he can use as much of the fish as possible. The Charred menu is an homage to Joachim’s love of southern comfort foods, and features an incredible selection of oysters, steaks, seafood, and more.
For oyster dishes, Charred hosts an in- house shucker where you can sit back and watch these rough and hardened bivalves transform into something truly beautiful. The Combo Oyster platter features
an assortment of Oysters Rockefeller, Chargrilled, Bacon and Bleu, Sweet and Spicy, and French Onion. With so many choices, the combo is a great way to sample them all. Joachim’s staple oyster dish, however, is the Oyster Joachim, featuring
a trio of fried oysters sitting atop a bed of creamed leeks, then adorned with bacon and drizzled with Béarnaise. Y’all...it is really good.
