Prime Cut at Island View Casino Resort’s Beach View Casino in Gulfport offers its patrons the best of both worlds: amazing beach views and top- notch dining. Prime Cut opened in the summer of 2018 in conjunction with opening of the Beach Tower expansion.
The restaurant features a gentle Art Deco style that doesn’t detract from the sunset views over the Gulf. Guests can also enjoy watching the hustle and bustle of the kitchen, which is open to the dining floor.
With a name like Prime Cut, you would be right to expect the highest quality meat selection. “We offer four different sizes of prime rib,” says Ed Layton, vice president of food, beverage and hotel operations. “We insist on using 1855 Black Angus, a premium cut of upper choice quality which borderlines on the prime grade. This high grade ensures ideal marbling for the most flavorful and juicy beef.”
While beef is implied by the name, Prime Cut also has a great selection of seafood. One of Layton’s recommendations, the Shrimp and Crawfish Linguini Pontchartrain, is a savory dish of creamy Creole cream sauce tossed with linguini and topped with grilled Gulf shrimp. “We strive to use fresh, Gulf seafood whenever it’s available, and opt for sustainably farm-raised seafood when it’s not,” he says.

A very unique menu item, the Spinning Salad, is a combination of lettuce and spinach mixed with diced eggs, bacon, crispy chickpeas and diced tomato, which comprise the staple mix for the salad. Chefs deliver the mix to the table in an ice-cold stainless-steel bowl, placed on top of a larger, ice-filled bowl. The server then rotates and spins the top bowl as they are tossing it – thus the name! Once tossed, the server adds aged parmesan flakes and dresses the salad with Prime Cut’s creamy Dijon Parmesan dressing.
Prime Cut is also known for its selection of bourbons, specialty drinks and wines. “The managers generally have three or four high scoring wines, which may not be available via retail outlets,” says Layton. They keep the prices very affordable, so people are apt to try something different. We also have some signature drinks. Most reflect the tropical island theme, but we are also proud to offer a smoked Old Fashioned or Manhattan for the discerning drinkers.”
