As fans and foodies gathered around, Guy shared his passion for food and talked about preparation of the award- winning Bacon Mac ‘N’ Cheese Burger on the menu in Tunica and the origin of his trademark Donkey Sauce.
“There’s a big burger competition in New York called Burger Bash and I won with this burger, and there’s so many components to what make this burger work. They’re all subtle, but you have to do ‘em right. So, we toast the bun on both sides. We brush the bun with garlic butter, then we toast it. Then it gets Donkey Sauce on both buns.
“People say, what’s Donkey Sauce? Well, I made it up. It was not supposed to be called Donkey Sauce, but I said it one night. The team I was working with thought that was the funniest thing in the world, so they put it on a sign the next day... But it’s got the Donkey Sauce, which is a fortified aioli.
“So, you’ve got mayonnaise and you’ve got a little bit of mustard and ‘shire and roasted garlic, and salt and pepper and lemon juice. Then we take that patty and we cook that patty super-hot on both sides, and as fast as we can see it on one side, we’re flipping it to the other side, simply seasoning it with salt. Then we make that delicious mac-and-cheese with four different cheeses. We have the crispy bacon, thin sliced onion, pickles, and tomato...
“And that burger right there is in every restaurant that we have across the country, on the cruise ships in Mexico, in Costa Rica, you name it, that burger reigns supreme. I will challenge anybody, every single aspect of that burger we are proud of, as we are of all the food.”
